How to Prepare Rice Kheer: A Sweet and Rich Indian Dessert

Rice kheer, also known as payasam or rice pudding, is a popular and delightful Indian dessert that is loved by people of all ages. Made with fragrant rice, sweetened milk, and flavored with cardamom and saffron, this dish is a perfect blend of flavors and textures. If you’re looking to prepare this mouthwatering dessert at home, follow these simple steps to create a delicious rice kheer.

Ingredients:

– 1 cup of long-grain rice
– 4 cups of whole milk
– 1/2 cup of sugar (adjust to taste)
– 2-3 green cardamom pods, crushed
– 1/4 teaspoon of saffron threads, soaked in 2 tablespoons of warm milk
– 1/4 teaspoon of rose water (optional)
– A pinch of salt
– A handful of raisins and almonds (optional)

Instructions:

1. Rinse the rice under cold water until the water runs clear. This step is important to remove any impurities or starch from the rice.

2. In a large pot, bring the milk to a boil. Once boiling, reduce the heat to a simmer and add the rinsed rice. Stir the mixture occasionally to prevent sticking.

3. Let the rice cook in the milk until it becomes soft and starts to absorb the milk. This process may take about 15-20 minutes. Keep stirring occasionally to ensure the rice doesn’t stick to the bottom of the pot.

4. While the rice is cooking, crush the cardamom pods using a mortar and pestle or the back of a spoon. Add the crushed cardamom to the pot.

5. Add the sugar to the pot and stir until it dissolves completely. Adjust the sweetness according to your taste.

6. Once the rice is fully cooked and the milk has reduced to a thick consistency, add the soaked saffron and rose water (if using). Stir well to combine.

7. If you like, add the raisins and almonds to the pot. Cook for another 2-3 minutes until they are heated through.

8. Turn off the heat and let the rice kheer sit for a few minutes to thicken slightly. This step is optional but recommended for a richer texture.

9. Serve the rice kheer hot or chilled, garnished with a few saffron threads and nuts. Enjoy this creamy, aromatic dessert as a sweet treat after a meal or as a comforting bedtime snack.

By following these simple steps, you can easily prepare a delicious rice kheer that will delight your taste buds and impress your guests. Happy cooking!
