Ingredients

Before you start cooking, gather the following ingredients:

– 2 cups of long-grain rice
– 1 cup of water
– 1 cup of chicken or vegetable broth
– 1 tablespoon of vegetable oil
– 1 large onion, finely chopped
– 2 cloves of garlic, minced
– 1 teaspoon of ginger, grated
– 1 teaspoon of ground cumin
– 1 teaspoon of ground coriander
– 1/2 teaspoon of turmeric powder
– 1/2 teaspoon of red chili powder (optional)
– 1/2 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1/2 cup of peas (fresh or frozen)
– 1/2 cup of carrots, diced
– 1/2 cup of green beans, trimmed and cut into 1-inch pieces
– 1 cup of chopped tomatoes
– 1/2 cup of yogurt (optional)
– Fresh cilantro leaves, chopped (for garnish)
– Lemon wedges (for serving)

Instructions

1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch, which can make the rice sticky.
2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn golden brown.
3. Add the minced garlic and grated ginger to the pot, and cook for another minute until fragrant.
4. Stir in the ground cumin, ground coriander, turmeric powder, red chili powder (if using), salt, and black pepper. Cook for another minute to release the flavors of the spices.
5. Add the chopped tomatoes to the pot, and cook until they are softened and the oil starts to separate from the tomatoes.
6. Add the rice to the pot, and stir well to coat the rice grains with the spices and tomato mixture.
7. Pour in the water and chicken or vegetable broth, and bring the mixture to a boil.
8. Reduce the heat to low, cover the pot with a lid, and let the rice cook for about 15 minutes. Do not stir the rice during this time.
9. After 15 minutes, add the peas, carrots, and green beans to the pot. Stir well, then cover and let the rice cook for another 10 minutes.
10. If you’re using yogurt, mix it with a little water and pour it into the pot. Stir well, then cover and let the rice cook for another 5 minutes.
11. Once the rice is cooked, turn off the heat and let it sit for 5 minutes with the lid on. This will allow the rice to absorb any remaining liquid and fluff up.
12. Fluff the rice with a fork, garnish with chopped cilantro leaves, and serve with lemon wedges on the side.

Now that you know how to prepare pulao, you can enjoy this delicious one-pot rice dish at home. Whether you’re hosting a dinner party or simply looking for a comforting meal, pulao is sure to impress your family and friends with its rich flavors and aromatic spices.
