How to Prepare Veg Biryani: A Culinary Journey

Ingredients:

– 1 cup basmati rice
– 2 tablespoons oil

– 3 tomatoes, finely chopped
– 1 cup mixed vegetables (carrots, beans, peas, etc.)
– 1 cup frozen peas
– 1 cup yogurt
– 1 teaspoon ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon cumin seeds
– 1 teaspoon coriander powder
– 1 teaspoon fennel seeds
– 1/2 teaspoon garam masala
– 1/2 teaspoon fenugreek leaves (kasuri methi)
– Salt to taste
– 2 green chilies, slit
– 2 bay leaves
– 4 cloves
– 2 cardamom pods
– 1 star anise
– 1 cup water
– 1 teaspoon saffron threads, soaked in 2 tablespoons of warm milk

Preparation:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.
2. In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and the soaked rice. Cook until the rice is almost done, but still firm to the bite. Drain the rice and set it aside.
3. In a separate pan, heat the oil over medium heat. Add the cumin seeds, fennel seeds, and cloves. Once the seeds start to crackle, add the bay leaves, cardamom pods, and star anise. Sauté for a few seconds.
4. Add the sliced onions to the pan and cook until they turn golden brown. Add the ginger-garlic paste and sauté for another minute.
