Step 1: Selecting the Potatoes

Before you start canning, it is essential to select the right potatoes. Choose firm, healthy potatoes with no signs of sprouting, blemishes, or soft spots. It is best to use potatoes that are fresh from the garden or the market, as older potatoes may not hold up well during the canning process.

Step 2: Preparing the Potatoes

Once you have selected your potatoes, wash them thoroughly under cold running water to remove any dirt or debris. You do not need to peel the potatoes, as the skins will help protect them during the canning process. If you prefer peeled potatoes, you can peel them after washing.

Step 3: Cutting the Potatoes

Cut the potatoes into uniform sizes, such as cubes or slices, to ensure even cooking and canning. The pieces should be approximately 1/2 inch thick. It is essential to cut the potatoes while they are still cold, as warm potatoes can discolor and become mushy during the cutting process.

Step 4: Preparing the Canning Equipment

Before you begin canning, make sure you have all the necessary equipment. This includes a canner, jars, lids, bands, and a canning funnel. It is also a good idea to have a jar lifter, a bubble remover, and a magnetic lid lifter to make the process easier.

Step 5: Processing the Potatoes

Fill the canner with water and bring it to a boil. Place the jars in the canner, ensuring they are submerged in water. Add the lids and bands to the jars and secure them with the jar lifter. Once the water reaches a rolling boil, add the cut potatoes to the jars, leaving 1 inch of headspace.

Step 6: Sterilizing the Jars

Keep the jars in the boiling water for 10 minutes to sterilize them. This will help prevent contamination and ensure the longevity of your canned potatoes.

Step 7: Filling the Jars

After the jars have been sterilized, remove them from the canner using the jar lifter. Fill each jar with the cut potatoes, leaving 1 inch of headspace. Wipe the jar rims with a clean, damp cloth to remove any potato pieces or moisture.

Step 8: Sealing the Jars

Place the sterilized lids on the jars and secure them with the bands. Using the magnetic lid lifter, tighten the bands until they are finger-tight.

Step 9: Processing the Jars

Return the filled jars to the canner, ensuring they are submerged in water. Bring the water to a rolling boil and process the jars for 35 minutes. This will create a vacuum seal, which is essential for preserving the freshness of the potatoes.

Step 10: Cooling and Storing

After processing, remove the jars from the canner using the jar lifter and set them on a towel to cool. Once the jars have cooled to room temperature, check the seals by pressing on the center of the lids. If they do not move, the jars are sealed properly. Store the canned potatoes in a cool, dark place for up to one year.
