2. Once the milk reaches the desired temperature, sprinkle the citric acid powder over the surface of the milk. Allow it to sit for about 5 minutes. You will notice the milk starting to curdle and form a layer of solid curds on top.

3. Add the rennet to the pot and stir gently for about 1 minute. Continue to heat the milk for an additional 2 minutes, then turn off the heat. Let the mixture sit for about 15 minutes, allowing the curds to fully form.

4. After 15 minutes, gently stir the mixture to break up the curds. You can use a slotted spoon to scoop out the curds and place them in a cheesecloth-lined colander or a fine-mesh strainer. Let the curds drain for about 5 minutes to remove excess whey.

5. Transfer the curds to a bowl and add the salt. Use your hands to gently knead the curds, which will help to expel any remaining whey. Continue to knead until the cheese becomes smooth and elastic, about 5-10 minutes.

6. Shape the cheese into a ball or a log, depending on your preference. You can also add herbs or spices to the cheese before shaping it. Once you have your desired shape, wrap the cheese in plastic wrap or parchment paper and place it in the refrigerator for at least 1 hour to firm up.
