3. Sanitize the Jars: After washing, sanitize the jars to kill any bacteria or microorganisms that may be present. There are two common methods for sanitizing canning jars:

4. Prepare the Lids and Bands: While the jars are sanitizing, prepare the lids and bands. Wash the lids and bands with hot, soapy water and rinse them under warm water. Place the lids in a small bowl of hot water to keep them warm and pliable.

5. Remove Air Bubbles: Once the jars are sanitized and the lids are warm, remove any air bubbles from the jars. Use a clean, damp cloth to wipe the inside of the jars, ensuring that no air bubbles are trapped. This is crucial for a proper seal.

6. Fill the Jars: Fill the jars with your prepared food, leaving the recommended headspace. The headspace is the space between the top of the food and the rim of the jar. Follow the specific canning recipe for the correct headspace amount.

7. Seal the Jars: After filling the jars, place the lids on top and secure the bands tightly. Ensure that the lids are seated properly and that the bands are not too tight or too loose.

8. Process the Jars: Finally, process the jars in a water bath or pressure canner, depending on the type of food and the recommended processing time. Follow the canning recipe for the correct processing method and time.
